Average age of the vines: 21 years

TERROIR:

50% of the Grenache comes from the Termenès terroir between the villages of Rouffiac-des-Corbières and Montgaillard. The ground is composed of sandstone arenas, and is located at an altitude of 450 meters. It enjoys a cool Mediterranean climate with a slight Atlantic influence.

50% of Grenache, Carignan and Syrah come from the Quéribus terroir, in the Cucugnan valley and Duilhac-Sous-Peyrepertuse: soil of clay-limestone colluvium, located at an altitude of 300-400 meters. The climate is typically Mediterranean, tempered by the altitude.

VINIFICATION:
Vinification with 79% destemmed grapes. Fermentation for 6 to 8 days then the vatting lasts 25 to 30 days depending on the container with pumping over and two or three load shedding. Running off and pressing with separation of the presses. Fermentation malolactic.
Vinification in carbonic maceration at 21% (3/4 Carignan; 1/4 Syrah) with a vatting for 12 to 15 days.

AGEING: 40% aged in vats and 60% aged in single-wine barrels for 12 months.

NUMBER OF BOTTLES: bottled on July 22-23, 2019.

AGING: To be consumed within 8 to 10 years following the vintages.

DEPARTMENT:
17 – 18°C. Goes well with grilled red meats, lamb, poultry, creamy cheeses

DESCRIPTION:
This cuvée is the intense expression of the magical terroir of Domaine Peter Sichel located at the bottom of the picturesque village of Cucugnan. The depth of its aromas and the racy elegance of its tannins reflect the warmth and sweetness of the South of France.

TASTING:
A very expressive and crunchy nose made up of ripe fruit, blackcurrant, prunes. Elegance and suppleness characterize the palate with a frank attack that melts into a round of aromas of pepper jam and spices. The reminder of a generous sun at altitude in the exquisite finesse of the tannins. A wine that will have many good years ahead of it.
